Protein Pancakes?

Famous Arbonne Protein Pancakes

1 Cup Almond Milk (or Coconut Milk)

3 Eggs (or egg whites)
2 Tablespoons Flax Meal
1/3 Cups Cottage Cheese (can substitute with Coconut Milk)
2 Scoops Arbonne Vanilla Protein
1 Cup Gluten Free Pancake Mix (Bobs Red Mill makes a good one)

Mix all the wet ingredients, then blend in the dry then cook on a skillet with some Coconut Oil.

* You can add lemon and orange rind and their juice for a more citrus taste.

OR


2/3 cup of dry oatmeal cooked with 2/3 cup of water (about 1 min. in the microwave)
2/3 cup egg whites (I use the carton rather than wasting the yolks)
1 scoop Arbonne Protein powder (I use chocolate, but any flavor is fine)
dash of cinnamon
Optional: add either blueberries, 1/2 grated or diced apple or other fruit

Combine all ingredients and pour into an 8" non-stick skillet sprayed with oil over med/high heat. The mix will fill the bottom of the pan, making one large pancake. Flip when the edges start to come away from the sides of the pan or the pancake is slightly brown underneath.
